When you need a dinner that’s comforting, hearty and packed with vegetables, a big bowl of minestrone ticks all the boxes.

For Cooking With Coles , cook and TV personality Courtney Roulston is putting her spin on this Italian classic.

It’s loaded with wholesome ingredients, easy to prepare and perfect for feeding the whole family.

1. Heat oil in a large saucepan over medium heat. Add the bacon, celery and carrot and cook, stirring, for 6 mins or until bacon edges are crisp and vegetables are tender.

2. Add the thyme, pasta sauce, stock and ¾ cup (185ml) water to the pan and bring to a simmer. Add pasta and cook, stirring, for 5 mins or until just tender. Add the pumpkin, zucchini, bean mix and green beans and bring to a simmer. Cover and cook for 6-8 mins or until the pumpkin is tender.

3. Stir in spinach until just wilted. Season. Ladle soup into serving bowls and top with parmesan to serve.
